Crispy Shoestring French Fries piled high on a plate are not only good eating but might just remind you of the game of Pick-up-Sticks.
I remember being a little girl and just loving those cardboard cans of shoestring potato sticks. Can you relate? This was probably in the late 60’s or early 70’s.
Well, I’m a grown adult now and even though I don’t buy those sticks anymore I still crave them.
This is the perfect recipe to cure those cravings! These deep fried crispy crunchy fries are my go-to only I call them Shoestring French Fries.
How to get that thin even cut shoestring type potato.
The easiest way to make these skinny shoestring fries is by using a julienne slicer.
There are actually two types of kitchen gadgets that can make julienne potatoes. Either one will do the job so it’s whatever you prefer.
- Having a julienne hand peeler is nice because it’s small enough that it can easily fit in a kitchen drawer.
- Today, I used a tabletop slicer that has multiple blades. This type of slicer is good to have in the kitchen because there are different blades that can be interchange for different types of cuts. In my mind having a multi blade mandolin is a plus for any kitchen.
What is the safest way to deep fry foods?
When deep frying foods I highly recommend using a deep fryer that has a temperature control like this fryer. Using a deep fryer with controls will keep the oil temperature regulated the entire time while cooking.
There’s no need to use a thermometer and it’s more likely your food will be cooked evenly and less likely to burn. It’s just all around the safest way to frying foods. Oh well, lets get to this recipe!
Shoestring French Fries Recipe
Ingredients:
- Idaho Potatoes (use 2 potatoes per person)
- Lawry’s Seasoned Salt
- Peanut oil for frying
Directions:
Cut and Cool Potatoes
Carefully slice potatoes julienne style cut.
Rinse cut potatoes and place in a bowl of cold water and refrigerate for about 1 hour.
Tip: The trick to making a good crispy French fry is making sure the cut potatoes are good and cold when placing in the hot oil.
Drain water from cut potatoes and place on paper towels and pat dry.
Fry Shoestring Potatoes
Place peanut oil in deep fryer up to level suggested by manufacturer. Heat oil to 375 degrees Fahrenheit.
Place dried fries in deep fryers wire basket and gently lower basket into hot oil. Fries may need to be cooked in batches depending on how many you plan on making. By all means do not over fill the basket.
Cook time varies so keep an eye on them and cook to your preference. I like mine crispy so I cook them for about 4 minutes or until they start to turn light brown.
When the fries have cooked to your liking, gently lift the basket out of the oil allowing grease to run off fries back into the hot oil.
Transfer cooked fries to paper towel lined stainless steel mixing bowl and sprinkle lightly with Lawry’s Seasoned Salt. While holding onto the bowl lift it up to toss. Shake fries up and down and side to side in bowl to distribute seasoning evenly.
Repeat until all fries are cooked.
Serve fries with your favorite dish or these Shoestring French Fries are good alone just like eating potato chips.
