Split Pea Soup Seasoned With Ham Hocks

Green Split Pea Soup
I had never before tried a recipe for split pea soup and wanted to experiment so I bought a 1-pound bag of dried green split peas. My recipe turned out wonderful that I definitely will be making it again. Yes indeed, a recipe well worth sharing!
As I was strolling through the grocery store I began throwing items in my cart of what I knew would make a scrumptious soup.
One thing I know for sure is that I want the split pea soup to remain green therefore I do not use ingredients that will change the color of the soup.
There are some recipes out there that use carrots but when using carrots it really changes the color of the soup especially when blended and I blend this recipe. My motto is if it doesn’t look good, it doesn’t taste good. So, I leave the carrots out. No carrots? Nope, carrots are not part of this recipe.
I bought a package of smoked ham hocks. You may find ham hocks in packages of two or three, and that is fine. This recipe calls for one smoked ham hock but the other two can be placed in a air tight container and placed in the freezer for a different recipe. Ham hocks are great for flavoring soups especially bean soup recipes or black eyed peas.

Split peas are tasty and nutritious. They are an excellent source of fiber and a good source of iron.
Ingredients:
- 4 Tablespoons unsalted butter
- 1 smoked ham hock
- 1 medium onion chopped
- 2 leeks chopped (use the white and pale green parts)
- 2 shallots minced
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground pepper
- 1 pound dried split peas (rinsed and remove imperfections)
- 8 cups chicken broth
- 2 bay leaves
- 2 green onions for garnish (optional)
Directions:
When using dried beans it is usually recommended to soak bean in water for 6-8 hours but that is not necessary when using dried split peas.
In a large stock pot melt butter. Add ham hock and cook for abut 2-3 minutes. Add onions, leeks, shallots in with the ham hock and saute until tender.
To the stock pot add chicken broth, rinsed split peas, salt, pepper and bay leaves.
Bring mixture to boil. Reduce heat, cover and simmer for 1 hour stirring occasionally so the peas don’t get stuck on the bottom of the pan.
After an hour check peas for tenderness. If they are still a bit crunchy cook for a little bit longer.
Remove bay leaves and using a hand blender gently blend soup to consistency desired.
Over low heat continue cooking soup for about 15 minutes longer.
Remove ham hock and serve your split pea soup warm. You can remove the meat from the ham hock and serve with the soup if desired.
