Cherry tomatoes are fun for popping in your mouth. Make these yummy tuna stuffed cherry tomatoes as an appetizer and they’ll be gone in a New York second!
Tiny cherry tomatoes filled with a simple tuna salad make perfect tomato bites for using up your summer tomato harvest, for football gatherings, family functions or just for the heck of it will do!
For this recipe I usually make about 20 stuffed tomatoes because that is about all I need. There will be extra tuna and we use that up for sandwiches as a snack. You can make as many stuffed cherry tomatoes with as much tuna you have if you desired.
Recipe For Tuna Stuffed Cherry Tomatoes
Ingredients:
- cherry tomatoes
- 1 5-ounce can chunk light tuna (in oil or water)
- 2-3 Tablespoons mayonnaise (I use Hellemann’s)
- 3 Tablespoons yellow onion chopped
- pepper to taste
- dill sprigs (optional)
- celery seed (optional)
Directions:
Prepare Cherry Tomatoes
Rinse cherry tomatoes under cool water and dry completely. Using a sharp knife or tomato knife carefully hollow out tops of tomatoes. This can be done by inserting knife near the stem and slicing around the top of the tomato. Set aside cut tomato and continue cutting the rest of the tomatoes.
TIP: When placing hollowed tomato on a plate if the tomato does not stand up straight on its own you may need to make a thin slice on the bottom of the tomato in order to keep it from tipping over once it is filled.
Prepare Tuna Filling
Open can of tuna and drain as much liquid out as possible. Place drained tuna in a medium bowl. Stir in mayonnaise, onion and pepper until completely combined.
Stuff Tomatoes
Take a small amount of tuna and gently stuff each cherry tomato. Top with dill sprigs and or celery seeds. Serve and enjoy!
