Below are a few ideas to serve this jalapeno cornbread with. Seriously though, do you really have to have a dish to eat cornbread? Sometimes it can be good all by itself!
Sweet Jalapeno Cornbread Recipe
Ingredients:
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup granulated sugar
- 1/2 cup butter melted
- 1/2 cup creamed corn
- 1 cup buttermilk
- 2 large eggs at room temperature
- 3 jalapenos (dice 2 and slice 1) with stems and seeds removed
- 1 cup freshly grated white cheddar cheese
Instructions:
Preheat oven to 400 degrees Fahrenheit.
Prepare Dry Ingredients
In a medium bowl Combine cornmeal, flour, baking powder, baking soda, salt and sugar and set aside.
Combine Wet Ingredients
In a large bowl combine eggs, buttermilk, creamed corn and melted butter. Then slowly add flour stirring to combine until all ingredients are moist.
Combine Remaining Ingredients
Fold in diced jalapenos and cheddar cheese just until combined. Pour batter into a greased 8×8 pan and place sliced jalapenos on top of batter like so.
Bake
Bake in preheated oven for 25 minutes or until a toothpick inserted into center of bread comes out clean. Serve with butter or honey butter and enjoy!
