Sweet Potato Pie

Sweet Potato Pie is known as a Southern recipe served anytime of the year. It’s easy to make and has only two simple spices.
Sweet potato pie is similar to that of a pumpkin pie but instead of using pumpkin or squash this recipe uses sweet potatoes. This sweet potato pie is the only dessert my family requests for the holidays.
Sweet Potato Pie Recipe
Pie Filling Ingredients
- 3 large sweet potatoes (about 2 pounds)
- 1 stick unsalted butter (room temperature)
- 2 Large eggs
- 1 1/4 cups granulated sugar
- 1 can evaporated milk (set aside 1/4 cup for topping)
- 1/4 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 9-inch pie crust (see Jett’s homemade pie crust recipe or buy pre-made crusts)
Pie Topping Glaze
- 1/4 cup granulated sugar
- 1/2 teaspoon cinnamon
- 1/4 cup evaporated milk (from reserve noted above)
Instructions
Sweet potatoes can be boiled, baked or steamed. This recipe uses a pressure cooker.
Prepare Potatoes
Rinse potatoes and brush off excess dirt. Steam potatoes in a pressure cooker for 30 minutes. Let potatoes cool. Remove skins and drain off any excess water.
Prepare Filling
Preheat oven to 350 degrees Fahrenheit. In a medium bowl add sweet potatoes, eggs, butter, cinnamon, nutmeg and sugar until well blended. Slowly add evaporated milk to the pie filling and blend until it has a loose consistency. Pour mixture into prepared pie pan with crust. (note: you may not use all the milk).
Prepare Topping
In a medium sauce pan add remaining evaporated milk, cinnamon, sugar and mix until sugar dissolved. Using a pastry brush gently brush the mixture on top of the filling.
Bake
Place a crust shield over the pie to protect crust from over cooking or burning. Place pie pan on baking sheet and bake pie in preheated oven for 50 minutes. Remove crust shield and continue baking for 10 minutes. Remove pie from oven and cool completely on wire rack.
