Dad’s Special Biscuits and Gravy Recipe!

I did it! I finally got my husband to give up his recipe for biscuits and gravy so I could share it with you! Yes, it’s a BIG DEAL because this recipe is one of his favorites and all of our girls like it too!

This recipe is all about the gravy!

Who Is Dad?

Back in the day Dad would call four of our girls ahead of time and let them know he was going to fix biscuits and gravy for breakfast. At that time we still had a young one living at home. Let me backup a second.

“Dad” is my husband, Nial. Nial has five wonderful daughters. That makes me a step-mom to five beautiful girls.

Today, all the girls are now adults and have their own lives. So, getting them together for Dad’s biscuits and gravy is somewhat a thing of the past. It sure has brought us some wonderful memories!

Just because we now have an empty nest does not mean this recipe has gone by the wayside. Oh NO!

Biscuits and Sausage Gravy

Ingredients:

The ingredients include: Jimmy Dean Original or Spicy Sausage. We have tried other sausages but Jimmy Dean’s tastes the best.

This recipe uses half the Jimmy Dean stick and serves about four people and can easily be doubled to serve more if desired. You can always use the entire 1 pound stick if you want a meatier gravy.

Other ingredients include whole milk, shortening or lard, butter, all-purpose flour, white pepper, chicken flavored soup base and Grands Flaky Layer Biscuits.

Why Grands Flaky? Because it has flaky layers that can be torn apart and place gravy between the layers! Yum Yum!

Gravy

  • 1 pound Jimmy Dean Original or Spicy Sausage (use half the stick) or if you want it extra meaty use the whole stick
  • 1 Tablespoon shortening or lard
  • 6 cups whole milk
  • 5 Tablespoons salted butter
  • 1/2 teaspoon white pepper
  • 1 teaspoon chicken flavored soup base

Thickener

  • 1 1/2 cups whole milk
  • 7 Tablespoons all-purpose flour

Biscuits

1 16.3 ounce can Pillsbury Grands! Flaky Layers Biscuits (8 count)

Directions:

Brown Sausage

In a saucier pan add sausage and shortening. Chop meat using a meat chopper. This is one of Dad’s favorite kitchen tools when making this recipe “because it looks like a rocket”! But it is very functional. He also uses it for chopping hamburger when making his special tacos, Dad’s Beef Taco’s.

Cook sausage on medium heat until fully cooked and slightly browned.

We use this pan alot as the bottom of the pan is round and there are no corners.

Once the sausage is fully cooked add 6 cups whole milk and butter.

Prepare biscuits: follow directions on packaging.

Make Thickener

To make the thickener, put 1 1/2 cups whole milk in a large glass. Add 7 Tablespoons of flour and use a whisk to combine. Dad gives it the roll between the hands motion. Lol!

To ensure a lump free gravy Dad will use a mini strainer and pour the thickener into a measuring cup.

Slowly add half of the thickener to the sausage and gravy mixture and stir continuously while cooking over medium-high heat until it comes to a full boil.

Thicken Gravy

At this point the gravy will likely need more thickener. Gradually add half of the remaining thickener and bring to a full boil again. Continue repeating these steps until desired consistency.

HINT: If the gravy is too thin add more of the thickener until desired thickness. And if the gravy is too thick, don’t worry, you can add more milk, only a little bit at a time though.

Don’t forget about the biscuits! Make sure they are a nice golden brown color.

Serve with fresh squeezed orange juice, hot sauce and enjoy!
