Vegan Summer Sausage

Make the best flavored vegan summer sausage right in your own home using plant-based burger patties and a few spices.
This vegan summer sausage is super easy to make. The recipe uses plant-based burger patties combined with simple spices and a vegan liquid smoke. Shape into a sausage roll, bake and enjoy! This recipe was created with my vegan step-daughters in mind. I made this for them for the holidays and they said this recipe is “definitely blog worthy”! So, I am sharing my vegan summer sausage recipe with you. I hope you enjoy as much as we all did.
Homemade Vegan Summer Sausage
This recipe will make one summer sausage. Recipe can be doubled.
Ingredients
- 8 ounces meat substitute (I used 2 Beyond Burger Plant-Based Patties)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon mustard seed
- 1/4 teaspoon vegan liquid smoke
- 1/2 teaspoon whole peppercorns
- 1/4 teaspoon coarse ground peppercorns
Instructions
Combine Ingredients and Chill
Place all ingredients in a large bowl and knead by hand until all ingredients are well incorporated. Shape mixture into a log and roll several times on a cutting board to get at least 9-inches in length. Wrap log in plastic wrap and chill for approximately 1-hour.
Bake
Preheat oven to 200 degrees Fahrenheit. Remove sausage from refrigerator, remove plastic wrap and place log onto a baking pan with rack. To get that beautiful brown edge on the outside of the log bake the sausage on a baking pan uncovered for at least 6 hours and no longer than 7 hours. Carefully remove pan from oven, wrap log in a sheet of aluminum foil and refrigerate.
Slice and Serve
Slice chilled vegan summer sausage to desired thickness and serve with a variety of slices vegetables, crackers and or vegan cheeses. If desired, serve with some type of sauce (mustard or your favorite BBQ sauce). Oh, and to keep all the food from getting touched by everyone don’t forget to set out the frilly toothpicks in a small cup or container. TIP: if the cup or container is too deep just add a few dried beans and then add the toothpicks. Works perfect!
