Tonight’s Easy Dinner; Beef Stroganoff
The perfect meal to fix during the week is this delicious beef stroganoff. It’s easy to make and generally takes less than 45 minutes.
After a long day at work sometimes I just want to come home and make something simple. Who am I kidding?! It’s not just sometime it’s ALL THE TIME! Yes, most times I’m all about simple during the week especially when it’s my turn to cook.
The only real labor involved with this dish is chopping the steak. It really isn’t that hard though when using a chef knife. The rest you just throw together and there you have a wonderful beef stroganoff dinner.

Ingredients
- 2 pounds Ribeye steak
- 1 pound sliced button mushrooms
- 2 packets Lipton Onion Soup Mix (I like to use 1 packet of onion soup and 1 packet of mushroom onion soup)
- 2 cups beef stock
- 1 (16 ounce) sour cream or 2 cups crème fraîche
- 5 ounces chive and onion cream cheese
- 1/2 cup heavy whipping cream
- 12 ounces egg noodles
- Pepper to taste
- Fresh Parsley used as garnish (optional)
Directions:
So, first using a chef knife, chop the steak into bite size pieces. I like to use a nice well marbled ribeye steak as this makes a most flavorful and tender dish. Place the meat in a large skillet and cook on medium heat until meat is fully cooked.
Add mushrooms, onion soup mix, and 1 cup of beef stock to the steak and simmer over medium heat for about 15 minutes.
In a separate pan cook noodles according to package instructions.
In a medium bowl add sour cream, cream cheese and heavy whipping cream. Whisk to combine. Add to meat mixture and stir together. Continue cooking for about 5-7 minutes. If need be add the other cup of broth if the sauce gets too thick.
Dinner’s Ready!

Dinner is ready! Serve noodles in a bowl or plate and top with stroganoff sauce or combine noodles with stroganoff sauce and serve. Either way you serve this dish it will be wonderful and satisfying.
