Simple Recipe; Corned Beef Hash Made With Leftovers

Using Corned Beef For Leftovers
Corned beef hash is usually a pre-planned meal. Normally you would fix corned beef and cabbage the night before for dinner and the next morning you would make the hash with the leftover corned beef.
If you just want to make corned beef (CB) hash without serving corned beef and cabbage the night before that is perfectly fine but I do recommend cooking the CB the day before.
This is the part where I mention this is a “pre-planned meal”. And, whose to say you have to prepare this meal for breakfast. You can fix it for your evening meal if you please.
This recipe is focused on leftover corned beef. If you do not have leftover’s be sure to follow the directions on cooking your corned beef according to the packaging or you can go to my “corned beef and cabbage recipe” here . Either way, this dish will keep them asking for more.
Corned Beef Hash Recipe
Ingredients:
- Cooked corned beef (or leftovers) cut into bite size pieces
- 1 large yellow onion chopped
- 3 large carrots chopped
- 2-3 large russet potatoes peeled and chopped
- 1 stick unsalted butter
Directions:
Prepare a medium pan with water. Add potatoes and carrots and parboil for about 10 minutes.
Melt butter in non-stick skillet and add onions cooking for about 3-5 minutes or until soft.
Drain potatoes and carrots and add to skillet with onions.
Cook on medium heat until underside of potatoes have browned and crisped up.
Flip with spatula and brown other side.
Congratulations! You meal is ready. Enjoy!
