Take your greens to a whole new level and give them a little dash of oomph with this easy recipe for Italian greens.

Sautéed escarole, spinach, and collard greens is what makes up this delicious Italian dish. Along with olive oil, grated onions, minced garlic, dried crushed red pepper, broth (chicken or vegetable) and topped with freshly grated parmesan cheese (optional). Now you talk about a new version of greens? Include this greens recipe with an Italian twist for your next meal!

Another “greens” recipe my family enjoys is my Southern Style Cheesy Grits and Greens casserole. That is almost a meal in itself!

Recipe for Italian Greens

Italian greens include three types of greens (escarole, spinach and prepared collard greens). All the greens are sautéed together and seasoned with olive oil, grated yellow onion, minced garlic, crushed red pepper, chicken broth or vegetable broth if you want to make it a vegan/vegetarian style Italian greens and topped with freshly grated parmesan cheese.

Ingredients:

  • 2 Tablespoons olive oil
  • 1 medium grated yellow onion
  • 3 cloves garlic minced
  • 1/2 teaspoon crushed red peppers
  • 1 head escarole chopped
  • 2 cups fresh spinach or 1 bunch fresh spinach with stems removed
  • 1 bunch collard greens with stems removed and chopped
  • 1 cup chicken broth or vegetable broth
  • 1/4 cup freshly grated parmesan cheese (optional)

Directions

Sauté onion in olive oil over medium heat for about 3 minutes or until onions become translucent. Stir in garlic and crushed red peppers. Continue cooking for about 1 minute.

Add broth, escarole, fresh spinach and prepared collard greens to the pot and continue cooking over medium high heat bringing liquid to boil until greens begin to wilt. Turn heat to low and simmer greens for about 15 minutes or until all greens are tender.

Transfer greens to a serving bowl. Sprinkle with fresh grated parmesan cheese if desired and serve immediately.

    I am a transplant from NY to south westen VA. Turning the southern mainstay o Collards into a familiar italian flavored dish is a pleasure. Thank you for this recipe. I only had collards on hand, so that’s what i used. Liquid was a splash of balsamic with a bit of white wine. Nice, tasty side. Thank you!
